Colorful Bell Pepper Salad

A great summertime recipe that is very refreshing and a nice change from a green salad! This recipe makes a huge amount, so vary as needed.

3 each large green, sweet red and yellow peppers, thinly sliced (or add orange, too!)
18 cherry tomatoes, halved

Dressing:
1/4 c. finely chopped red onion
3 T. cider vinegar (I use balsamic)
3 T. olive oil
3 T. honey
1 T. Dijon mustard
1/4 t. salt
1/4 t. garlic powder
1/4 t. celery seed
1/4 t. pepper
1/8 t. crushed red pepper flakes (optional)

Make dressing and toss with all the vegetables to coat. Chill until serving time

I like to add lots of chopped basil leaves to this salad.
