Homemade Pita Bread

Have you ever tried making your own pita bread? Me, neither, until last night. It sounded so yummy to have fresh whole wheat pita bread with our BLTTs. And it was so easy to make. There wasn't much rising time at all, as there is with a traditional loaf of bread. Try them - - you may never buy pita bread from the store again!



3 to 4 cups whole wheat flour
1 TBSP yeast
1 1/4 cups water, warm
1/2 tsp. salt

Mix 2 cups of the flour, yeast, and salt. Add water and stir until flour mixture is moistened. Add enough more flour to hold the mixture together and until it pulls away from the bowl. Knead 4 to 5 minutes, unitl smooth and elastic. Seperate the dough into 8 balls. Roll each ball into a circle about 6 inches wide, making sure to lightly flour each side. Place rolled dough on thin cookie sheets. Bake on the bottom rack of your oven at 500 degrees for 5 minutes. The high temperature makes the pita bread puffy. Let cool and store in an air tight container. My be reheated in the oven, microwave, or toatster.
